The Dutch cheese makers recognize six gradations of Gouda cheese that are based on cheese maturing age — from 4 weeks for young cheese to very old cheese that is aged for more than 12 months some are aged even for 3 years!
Recorded history of Gouda cheese started in distant , making it the oldest cheese of modern mankind that is still in production using its original recipe. Although Gouda is named after a city in Noord-Holland, the cheese has been produced throughout the Netherlands for centuries. As Gouda is now produced on an industrial scale, it is quite uncommon for it to be made in this manner as milk spoils much quicker when it is unpasteurized, making it an unprofitable choice for large-scale producers. Nonetheless, over farms around the Netherlands still make Gouda in the old-fashioned way.

When gouda is young it has a buttery flavor. As it ages it dried out and the flavor of a nutty flavor Parmesan is an example of a nutty cheese. Sometimes you will see a gouda labelled as a Day Gouda. I have seen it at ALDI in the past, especially around the holiday season.
